  3. Behind the Numbers: 19|01 – Gose – Classic

January 20, 2016 by Dave Seymour

    BBNo Tap Clip - 19-01-000161-01

Not to be mistaken with its sour Belgian cousin gueze/gueuze, Gose is one of many European regional speciality sour beers, related to Berliner weisse and Polish Grodziskie/Grätzer.

Whilst famously associated with the city of Leipzig in Saxony, Gose originated in the 16th century in the nearby town of Goslar, taking its name from the river Gose. Brewed with at least 50% malted wheat, coriander and salt (either present in the local water or added separately), Gose proves there are exceptions even to the strict Reinheitsgebot (Purity Laws) of German brewing. Originally, Gose fermented spontaneously, imbued with a lemon-sharp tartness from the presence of lactobacillus, a quenching, light and dry mouthfeel, and thirst-making salinity.

Gose’s popularity in Leipzig resulted in brewers there copying the style and making it their own. By the 1800s Gose was seen as Leipzig’s local beer, and tanks of it were delivered daily to the city’s many ‘Gosenschänken’ (Gose taverns), where it continued to ferment before being packaged into distinctive long-necked bottles. Instead of being corked, secondary fermentation created a natural plug of yeast in the neck of the bottle.

Gose, like gueuze, witbier, Grätzer and Berliner weisse, have become part of the pantheon of exotic curiosities in modern craft beer, but each were once the everyday drink of the common man, the hard-earned refreshment for a day’s work. Industrialisation and the rise of pale lager marginalised Gose to obscurity, and despite occasional revivals it remained an oddity brewed on a tiny scale for much of the 20th century.

The style was revived in the early 2000s, its popularity in its native Germany growing in line with reinventions of the style in the American craft beer scene, pioneered by breweries such as Westbrook, Off Color and Lost Nation.

This week, we’re launching our own take on the style: 19|01 – Gose – Classic. Our recipe is based on the traditional form of this sour and salty wheat beer, inoculated with lactobacillus for tartness, coriander for herbal notes and salt for its crisp, refreshing salinity. It’s a truly nuanced and singularly refreshing beer style.

We’re huge fans of Gose and we’re really excited to finally launch our first recipe at the taproom this Friday at 6pm, ahead of its release next week. Start the year with a bang and banish the winter blues with a beer as bright and crisp as spring sunshine.
